Thai Basil Pesto

Ingredients

Handful of thai (holy) basil, (about 1 cup firmly packed leaves)
1 Tb fish sauce
1 Tb lime juice
1 Tb toasted sesame seeds
1 Tb rice wine vinegar
1 chilli
1 tsp sugar
1 tsp sesame oil
olive oil
salt and pepper (optional)

An easy recipe for using Thai/Holy Basil. Put all the ingredients into a food processor and blend it until you have the consistency you want. Add olive oil slowly during the blending, just like you would for normal (sweet basil) pesto. Taste and season with salt and or pepper if desired. Cooking this pesto will reduce the nutrient content and flavour, just stir it into whatever you’ve stir fried and eat it.
